It gives me great pleasure to welcome back Chef Serge Falcoz-Vigne of Tapas Bodega & Rum in Wake Forest, NC. One year ago, Chef Serge showcased his food artistry with wine pairings that were in every regard, amazing. He brings not only superb food creations but regales all with amazing vignettes of the life that brought him to a career in culinary. I had the pleasure of spending nearly two hours with Chef Serge tasting these wines while he contemplated flavors and the connection of wine and food. It was worth every second to see him create this menu as if he were conducting an orchestra of flavors to write the perfect pairing symphony. Enjoy!

Cost: $87.50 per person. Wine Club Members $78.00 (limit 2 tickets at the wine club discount). Tickets are sold in pairs, minimum purchase of 2 tickets.
Please read on for the wines and pairings…
First plate: 2021 Rosa Dia. Provence styled Grenache dry Rose. Notes of fresh berries, drifting floral perfume, with perfect acid and a light crisp finish.
Pairing: Melon au Jambon. Slice of melon with prosciutto, raspberry and an EVOO tapenade. Flavor, flavor, flavor.
Second plate: 2019 Barrel-Fermented Chardonnay. This is wine walks the delicate balance of oak and fruit. Aged sur-lies, providing a rounded palate of slight nuttiness wrapped around twists of pear, apple and slight hints of lemon. Selected to be served in the 2022, Our State Magazine Meet the Maker Dinner at the Fearrington. One of our classics. Pairing: Smoked Salmon à la Moulin. Creamy potatoes, salmon, lemon and chives.
Third plate: 2019 Tempranillo. A long-awaited release. 2019 was a spectacular year. This is the first red wine release from 2019. Berries, dried plum, and spice. With our additional planting coming into its own, we hope to be able to meet the demand for this easy-drinking, light yet sophisticated red wine.
Pairing: North Carolina Knightdale Pork Rillette. Prime BBQ local pork à la française. Served with crostini.
Fourth plate: 2017 Malbec (Côt). A true expression of the Malbec grape from our unique terroir. Inky purple, full fruit bouquet with complex berry, and jam on the tongue. A silky finish that prompts closed eyes and reflection.
Pairing: Traditionnel Cassoulet du Sud Ouest; served with shredded duck confit. (Chef Serge proclaims this dish, “French Beanie Weenies”). It was so amazing to taste, Chef sent a dinner portion home for Di and I to enjoy. Polished off every single morsel.
Fifth Plate: 2019 Petit Manseng. Normally we try to end one of these tasting plate gatherings with a red wine, but Chef Serge, who is a devotee of this grape, decided to create a special dish designed around this special wine. This new release continues the outstanding warmth and distinctive fruit profile that is JvD Petit Manseng Sec.
Pairing: “StrawBrie” Warm puff pastry wrapped Brie with strawberry compote; served with a vanilla, honey drizzle. You will want to slowly nibble this ending of a great celebration of wine and food!

Chef Serge Falcoz-Vigne, a native of Grenoble, France, quickly established himself in the Triangle restaurant scene with his traditional French cuisine. He has served as Executive Chef of 18 Seaboard and Executive Chef / General Manager of Saint Jacques. Today, Chef Serge owns Bodegas Tapas, Wine & Rum in Wake Forest.
Falcoz-Vigne’s passion for food comes through whenever he talks about gathering with friends and family around the table. “Sharing the meal, sharing the moment, sharing the emotion around the table, it is a very nice thing”. You are in for a treat as we hear Chef Serge speaking on food & wine.

Tickets are sold in sets of two, and you may purchase as many as you like until we’re sold out. Seating is family-style, 8 guests per table with first come, first served seating.
